Chef S. Dean Corbett’s extensive culinary background includes restaurant, hotel and private club experiences. Chef Corbett began his career in Dallas, Texas at the renowned Chandler’s Landing Yacht Club and later at the Ram’s Head Restaurant. After these experiences, he realized that a career as a chef was his true calling.

Arriving in Louisville in 1982, Chef Corbett had the opportunity to excel through the ranks of the four-star restaurant, Casa Grisanti, a Northern Italian gem, and later assumed the sous chef position at Sixth Avenue which served progressive American cuisine. It was with Grisanti that Chef Corbett was able to participate with the Taste of America: a celebration of the top 50 restaurants for President Reagan’s inauguration in 1984. His cuisine was also featured at the Bourbon Bicentennial at the renowned Explorer’s Club in New York.

In 1985, Chef Corbett had the opportunity to purchase a suburban restaurant named Equus, which is Latin for horse and appropriate in a city recognized around the world for its horse racing! Under his leadership the restaurant built a reputation of culinary excellence in Louisville’s dining scene including a four-star rating in the Louisville newspaper, the Courier-Journal, where reviewer Susan Reigler proclaimed Equus “not just one of the city’s best restaurants, it is absolutely one of the best.” Equus accolades include Food Arts, Southern Living and Wine Spectator.

In 2000, Chef Corbett opened Jack’s Lounge named after his late father and former business partner. Recognized for its award-winning cocktails and bar list, the lounge garnered rave reviews and received a “Best of Louisville” award three years in a row. In 2010, Chef Corbett merged the two restaurants to create the city’s best upscale bistro and a Louisville favorite, offering refined American cuisine and
creative cocktails.

In December of 2007 Chef Corbett decided to push his restaurant boundaries further and opened Corbett’s: An American Place. Located in a beautifully restored 19th century mansion, Corbett’s offers new American cuisine with an award-winning wine list. In 2008, Corbett’s was named as one of Esquire’s “Best New Restaurants,” and since then has continued to gain national attention with Chef Corbett’s appearances on MSNBC’s Today Show and The Cooking Channel’s Food(ography).

In 2009, Chef Corbett was one of six chefs to be inducted to the Honorable Order
of the Golden Toque. The Honorable Order is the highest recognition a chef can receive in the United States and has a membership restriction of only
100 lifetime active members.

Giving back to the community is a priority for Chef Corbett. He helped start several dinner fundraisers throughout the city including Kosair Charities Bourbon & Bowties. He is involved in countless other benefits supporting Juvenile Diabetes, Juvenile Autism, March of Dimes, Multiple Sclerosis and the American Heart Association.
Chef Corbett is also heavily involved with initiatives to support local and regional farmers and purveyors.

When not hard at work Chef Corbett enjoys spending time with his wife and their
three sons. Other hobbies include conducting cooking classes and entertaining neighbors and friends.
